So as I seem to be turning into the worlds biggest spinach fan, I thought I'd do a wee post about my loverly pie.
I was working weird hours in a rather horrific job, and needed something tasty to fill me up on my break, so I thought I would make my nice spinach and feta pie.
My recipe is mostly made up, however my method is stolen from Jamie Oliver!
Its super simple, basically I sautee and onion then chuck in loads of spinach and wilt it right down.
While all that's happening, I crumble a packet of feta into a bowl and mix with an egg, some grated parmesan, freshly ground pepper and a good grating of nutmeg.
Then when the spinach is wilted and cooled, ix the whole lot up.
I then wipe out the frying pan, coat lightly with olive oil and put in some filo pastry sheets. Pop in the spinach then tuck the filo sheets over the top. Coat it well with olive oil.
I start cooking i on the hob, just for a minute or so to get the bottom of the pie cooking, then bang the whole thing in the oven for about 20 minutes.
(If your doing this, please make sure your using a metal handles pan and that its OVEN SAFE!)

20 Minutes later, you have a gorgeous pie ready to dig into!! The pie keeps for a few days in the fridge, so you can eat it for a few lunches, or just have a big slice with a salad or baked potato for dinner. Yummmm!!!
